Tarte Poire [Gluten free and Vegan Pear tarte]

I started with the walnut-oat pastry dough that I typically use for crackers and pie crust.  Roll, cut and place in a spring-form pan.  I pre-baked the crust at 375F for ~20 minuted.  In the mean time, I prepared the filling: equal parts water and cashews, nutritional yeast, salt, brown sugar and vanilla.  Then, peel and slice the pears.

Fill the pans with the custardy mixture and arrange the pears.  Resume baking for another 20 minutes.  Allow them to cool and brush with pastry glaze - strained apricot jam.  Complete the dish with raspberries and sliced almonds.

It's got a good taste, but it's really heavy.  I think it would take on a new, lighter dimension by replacing some water with a bit of raw pear in the custard.

Strawberry and Kiwi Tarte

So good, with the fresh and acidic flavours of the fruit.

First, start with a sponge (a cake one).  I make this one by following the following ratio - 1:1:1:1 Eggs, Fat, Sugar and Flour.  That's the basis for the cake, but will require adding in the rest of the needed ingredients: flavouring (vanilla), salt, soda, powder, etc.

Bake in a fluted tart pan and cool on a wire rack.

Fill the top with either a custard, or whipped cream.

Arrange the fruit and brush with a pastry glaze (melted apple jelly or apricot jam).

Let the glaze cool for a few minutes to all ow it to set.

Gluten Free Apple and Pear Tarte

The gluten free crust is made from ground almonds, walnuts pecans and oats. Mixed apples and pears, garnished with dried cranberries.

Gluten free and vegan can taste great.

Sweet and Savoury Gruyère, Pecan and Apple Tarte

Sweet, savoury, roasty and smooth flavour!  Since there's no real baking that has to be done - this is a quick and easy dish.

Add sliced apples and grated gruyère to a tortilla.  Broil until the cheese just begins to brown.  Remove from oven and add pecans.  Broil again for 2 minutes.
